Ingredients: 1 cup all-purpose flour 2 tablespoons granulated sugar 1 tablespoon matcha powder 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 3/4 cup milk 1 large egg 2 tablespoons unsalted butter, melted 1 teaspoon vanilla extract Optional Toppings: Maple syrup Fresh berries (strawberries, blueberries, or raspberries) Whipped cream Ice cream Sliced bananas Method: In a large mixing bowl, whisk together the flour, granulated sugar, matcha powder, baking powder, baking soda, and salt until well combined. In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth. Pour the wet ingredients into the dry ingredients, and gently mix them together until just combined. Be careful not to overmix, a few lumps in the batter are fine. Preheat a non-stick pan over medium heat. Lightly grease the surface with butter. For each pancake, scoop about 1/4 cup of batter onto the pan. Use the back of a spoon to spread the batter into a round shape. Cook the pancakes for about 2-3 minutes, or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 1-2 minutes, or until they are golden brown and cooked through. Remove the pancakes from the pan and keep them warm. You can place them on a plate covered with aluminium foil while cooking the remaining batter. Serve the matcha pancakes with your favourite toppings, such as maple syrup, fresh berries, whipped cream, iced cream or sliced bananas.
