Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon matcha powder
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Optional Toppings:
- Maple syrup
- Fresh berries (strawberries, blueberries, or raspberries)
- Whipped cream
- Ice cream
- Sliced bananas
Method:
- In a large mixing bowl, whisk together the flour, granulated sugar, matcha powder, baking powder, baking soda, and salt until well combined.
- In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients, and gently mix them together until just combined. Be careful not to overmix, a few lumps in the batter are fine.
- Preheat a non-stick pan over medium heat. Lightly grease the surface with butter.
- For each pancake, scoop about 1/4 cup of batter onto the pan. Use the back of a spoon to spread the batter into a round shape.
- Cook the pancakes for about 2-3 minutes, or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 1-2 minutes, or until they are golden brown and cooked through.
- Remove the pancakes from the pan and keep them warm. You can place them on a plate covered with aluminium foil while cooking the remaining batter.
- Serve the matcha pancakes with your favourite toppings, such as maple syrup, fresh berries, whipped cream, iced cream or sliced bananas.
